On the basis of own studies and the literature it is shown how and to what extent the composition of fat in products of ruminants and monogastric animals can be influenced by nutrition. Fat modifications desirable in regard to human nutrition (increase of mono- and polyunsaturated fatty acids) are demonstrated, but also the limitation of these changes for the production of bacon and hard sausages.
